Cucumber Relish
Cucumber Relish
7 cups ground cucumber
3 cups ground carrots
2 cups ground onions
4 tablespoon salt
4 cups sugar
3 cups vinegar
3 teaspoons celery seed
3 teaspoons mustard seed
1. Combine ground vegetables and sprinkle salt; let stand at least 3 hours drain.
2. In large pot, put sugar, vinegar, and seeds. Bring to a boil, then add vegetables and simmer for 20 minutes.
3. Pour into sterilized canning jars. Process in boiling water bath for 30 minutes.
4. Makes 11 half-pints of relish.
